Bread Salad


Like that shiner. Ethan gave it to Jon while we were all wrestling with each other. This picture was taken about five minutes after the fact. You should see it now; it's all yellow and green and purple. Very ugly. Jon's mom asked Ethan on Sunday what happened to his daddy and he said "I smoked him while we were at home." Crazy little runt. But there's no denying that the kid is funny.

So, for FHE this week we did an activity where one of the kids had to come up with a funny "What if...." scenario and then we all worked together writing a poem about it. Christopher said "What if Ryan could fly?" Then I'd ask questions like: where would he go, what would he do, what would happen then...etc and we'd put a sentence down and then the kids would have to think of a word that would rhyme with the last word in the sentence for the next line and Jon and I would have to try to use the word they picked in the poem. It was a lot of fun and helped the kids with their rhyming skills too.

Today I'm posting the recipe for bread salad. I know it sounds a little weird to those of you who've never tried it, but it's cheap, healthy, quick, easy and tastes really good so don't be such a chicken. Give it a try.

So here are the two poems we wrote:

What If Ryan Could Fly?
If Ryan could fly
He'd go really high
He'd fly to the zoo
Then fly to Peru
His hair would fall off
And he'd get a cough
His clothes would fall too
'Cause they're scared of the poo
He'd crash when he landed
And then turn left-handed
I'm glad he can't fly
So now let's eat pie

What If Daddy Could Fly?
If Daddy could fly
He'd fly to the sky
He'd fly to Oklahoma
Then something about a coma
Then off to Arizona
With a woman named Mona
He'd visit Aunt Jenny
Then wish with a penny
In a big wishing well
Then eat some Blue Bell
He'd fish in the sky
For sharks to eat high


Nice huh? For those of you who don't know (you poor creatures) Blue Bell is a reference to a wonderful brand of ice cream.

Okay. Here's the bread salad recipe:


Bread Salad
Ingredients
• One loaf French bread cut in to 1 inch slices
• 3 cups cooked, cubed chicken breast
• 4 medium tomatoes, cut into chunks
• 1 (15.5 ounce) can great northern beans, rinsed and drained (about 1 1/4 c)
• 1 large cucumber, chopped
• 1/4 cup chopped fresh basil
• 1/2 teaspoon kosher salt salt
• 1/4 teaspoon pepper
• 3/4 cup balsamic vinaigrette
• 1/2 cup shredded Parmesan cheese
Directions
1. Place bread on a baking sheet. Broil 3-4 in. from the heat for 2-3 minutes or until golden brown, turning once. Cool on a wire rack. Cut bread into 1-in. pieces.
2. In a large bowl, combine the bread, chicken, tomatoes, beans, cucumber, basil, salt and pepper. Drizzle with vinaigrette and toss to coat. Refrigerate for 30 minutes. Sprinkle with Parmesan cheese and toss.

Voila! It really is good. I like to add craisens and almonds to it too sometimes.
